Wild Thyme is very pleased to be one of the few exclusive caterers serving the Brazilian Room. It is a unique and wonderful location and is a lovely site for memorable weddings and events of all kinds. It is our job as your caterer to enhance this beautiful setting with quality food and flawless service. In order to achieve this goal, we think it is important to take this opportunity to detail some of the logistics associated with the facility so that you may fully understand how we work in this venue.
Unless you have booked the room for the entire day, the hours listed on your contract are strictly adhered to by the Parks & Recreation Department. There are no exceptions. This strict time limitation presents a challenge for your caterer. Generally, the catering staff is given 60 to 90 minutes to complete the set up for your event. Set up includes, but is not limited to, rolling in the tables and chairs from storage and placing them on the floor, draping linens, place setting, setting up the wine bar and kitchen, placing flowers, and the final preparation of the food. Creating the "right look" for the buffet table takes care and time. Following food service, there is usually a 30 to 45 minute window for breaking down, putting away, cleaning, and loading out. As a result the Brazilian Room requires a team of trained personnel working efficiently and at top speed to make your party flow perfectly and seamlessly. Experience has proven that a compromise in staff will compromise the outcome of the event.
As a general rule, most weddings or buffet events fall within the price range of $55.00 to $70.00 per person all-inclusive. This amount covers linens, flatware, service, food and all applicable taxes. The 18% fee, applied to the food cost only, covers the caterer's requisite 8.5% payment to the Brazilian Room as well as the standard costs based on the total cost of the event.
